Abstract

Lipids are the naturally occurring hydrophobic biomolecules which consists of oils, fats, waxes, fatty acids, some vitamins, sterols, steroids and phospholipids. They can be classified on the basis of their composition, chain length, saponification or degree of unsaturation. Lipids are the concentrated source of energy and produce twice the energy produced by carbohydrates and proteins. Lipids are also involved in many of the biological functions. The saturated fatty acids are considered unhealthy while the unsaturated fatty acids rich diet is recommended by the Indian Council of Medical Research. Among the unsaturated fatty acids linoleic acid and linolenic acid are two essential fatty acids as they cannot be produced by our body. The major food sources of essential fatty acids are nuts, seeds, legumes and fish. Nowadays, the diet rich in fats and low in carbohydrates (Keto diets) have been used to control several diet related diseases.
