Abstract
Wheat is a key crop mainly used for human consumption through a range of wheat based end products. Lipoxygenase activity is correlated with quality characters of wheat viz., physical characteristics of flour and colour of grain. Lipoxygenase activity (LOX) in wheat grains is related to unwanted discoloration of end products based on wheat. To increase end user acceptability, various strategies were adopted to screen genotypes with low LOX activity and high yellow pigment content (YPC).
